Mmm, that looks good. I’ve been meaning to ask, do you have any good quinoa recipes? I want to introduce it to my (somewhat) picky husband and kids, but they are very skeptical. lol

Thanks! I love bean salads and am grateful you shared a recipe with the Cancer Project.
They are great. Their recipes mostly stand on their own; sometimes I ‘exotify’ them with other ingredients. Overall they are just wonderful and your salad looks easy and good. Cheers.

I cooked some last …
I cooked some last night and they turned out perfect. I soaked them for a day, drained the water and boiled in 5 volumes lots of salted water. They didn’t take as long as other beans or chick peas. Maybe… 30-40 minutes. Check them often until soft and drain immediately
